Purple (continued)

The purple carrots I discovered on my plate last Christmas time are growing here at the Community Garden (See 2/15/20) by Warhill High School. A neighboring family brought some (along with some orange and white ones) over to share. The white ones contain the least bit of nutrition. But all grown at the Community Garden are grown without pesticides or herbicides.

According to Jo Robbins all the purple varieties have more antioxidants/ different nutritional qualities than we commonly see in the grocery store.

Not being so fond of carrots, I had to read online and from an Ayurvedic cook book to put some dishes together. The easiest and first way was to put some in the Vita Mix and then add some apple juice to make a very energizing slush!
